Potluck pride (Yes To eating the rainbow!)


An easy way to make sure you're eating good stuff is to think about the colors on your plate. As a mom, I have found it's easier to ask my kids specifically which orange food they'd like on their plate tonight (bell pepper or carrots) than to threaten them with a vague "Eat your vegetables."

I remember my own mom always telling me I had to eat something green with my nightly pasta. Now we know that all the colors of the rainbow offer unique health benefits. This article from the North Dakota State University website offers compelling reasons to add each color to your diet.

My current go-to offering for school parties is a rainbow dish of raw vegetables (above). It's simple to assemble, and it's 100% guilt free. A rainbow of vegetables encourages the adults to snack on low-calorie, vitamin-rich raw foods. It gives kids something to crunch on and enables them feel involved in picking out vegetables from an assortment of choices. Plus it looks pretty nice when you place it on the table, if I do say so myself.
